Description:

Saccharomyces cerevisiae is a species of yeast that has been utilized in winemaking, baking, and brewing since ancient times. It is thought to be isolated from the surface of grapes, where it can be observed as part of the thin white film on the skins of certain dark-colored fruits, such as plums, residing among the cuticular waxes. This yeast reproduces through a process known as budding.

Saccharomyces Cerevesiae is used in the following ways-

  1. Brewing: In winemaking, Saccharomyces cerevisiae is employed as a top-fermenting or top-cropping yeast. This designation arises from its hydrophobic surface, which causes flocculation that allows the yeast to rise to the top of the fermentation vessel due to adherence to CO2. The yeast becomes dormant at approximately 5 °C (41 °F).
  2. Baking: Known as baker’s yeast, S. cerevisiae is widely used in baking. The carbon dioxide produced during fermentation acts as a leavening agent in bread and other baked products.
  3. Aquaculture: Due to the high cost of commercial CO2 cylinder systems, yeast-based CO2 injection is a popular method among aquaculturists for supplying CO2 to aquatic plants in underwater environments.
